about
Located in the heart of the parc Naturel de la Narbonnaise en Méditerranée, the Salin de Gruissan in the Aude department is a unique salt production, processing, and packaging site.
history
The existence of the Salin de Gruissan dates to antiquity, testifying to a rich and ancient history.
The salt industry is an indisputable heritage asset. The presence of the saltworks in the Parc Naturel Régional de la Narbonnaise harks back to a time when salt was one of the region’s main resources.
In the twentieth century, salt works supported dozens of families, making a significant contribution to the local economy. This natural heritage of Languedoc-Roussillon must be preserved if we are to continue to perpetuate the traditions that have shaped this region.

A place of production and preservation
The Salin de Gruissan is located between land and sea (the Massif de la Clape and the Mediterranean), in a geographical area swept by strong north-westerly winds. This favors sunshine and doubles daily evaporation at Salin.
These natural conditions make our terroir ideal to produce top-quality salt.
The Sauniers de Gruissan, with their knowledge handed down from generation to generation, perpetuate the production of Gruissan salt by mastering these natural elements on our 400-hectare salt marsh.
This knowledge enables us to guide the water through the salt tables to extract an exceptional product as the autumn equinox approaches when the salt has reached full maturity.
The operation of the Gruissan saltworks promotes bird activity and nesting. Indeed, the flooding of the salt pans creates a habitat for many bird species (Greater Flamingos, Avocets, Plovers, Terns, etc.) as well as for halophytic plants such as samphire and soda.
To ensure that this ecosystem is maintained in the long term, we take great care to respect the environment in which we operate: the structure of the basins is made from natural materials (wood, clay, stone, etc.), and shellfish shell islands have been created on the salt marsh to accommodate all the avian species in the area.
